🍫 No-Bake Chocolate Eclair Cake / Cheesecake Bars

Ingredients

For the crust:

  • 2 cups (about 200 g) crushed chocolate cookies (Oreos or similar, no filling)
  • ½ cup (115 g) melted butter

For the creamy filling:

  • 16 oz (450 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 2 cups (480 ml) heavy whipping cream (whipped to stiff peaks) OR 2 cups Cool Whip
  • 2 tsp vanilla extract

For the chocolate topping:

  • 8 oz (225 g) semi-sweet chocolate, chopped
  • 1 cup (240 ml) heavy cream
  • 2 tbsp butter (optional, for shine)

Instructions

1. Make the crust

  1. Mix crushed cookies with melted butter.
  2. Press firmly into the bottom of a 9×13 inch pan. Chill while preparing filling.

2. Prepare the filling

  1. Beat cream cheese and powdered sugar until smooth.
  2. Fold in whipped cream (or Cool Whip) and vanilla.
  3. Spread evenly over the chilled crust.

3. Make the chocolate topping

  1. Heat heavy cream until hot (not boiling).
  2. Pour over chopped chocolate. Let sit for 2 minutes.
  3. Stir until smooth. Add butter for extra shine if desired.
  4. Pour over the cream layer, spreading evenly.

4. Chill & serve

  • Refrigerate at least 4 hours (or overnight) until set.
  • Slice into squares and enjoy cold.
