Ingredients

1 large head cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

1 cup milk or plant-based alternative

2 cups panko breadcrumbs

½ cup grated Parmesan (optional)

Olive oil spray, as needed

Optional Dipping Sauce: ½ cup plain Greek yogurt, 2 tbsp sriracha, 1 tbsp honey, 1 tbsp lime juice, salt & pepper to taste

Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Cut the cauliflower into evenly sized florets for uniform cooking.

In a bowl, whisk together flour, garlic powder, onion powder, paprika, salt, and pepper. Slowly add milk, whisking until smooth to form the batter.

Dip each cauliflower floret into the batter, allowing excess to drip off.

Combine panko and Parmesan (if using) in a shallow bowl. Roll each floret in the mixture, pressing gently to adhere.

Place coated florets on the prepared baking sheet in a single layer. Spray tops lightly with olive oil. Bake for 25–30 minutes, flipping halfway, until golden and crispy.

For the optional dipping sauce, mix Greek yogurt, sriracha, honey, lime juice, salt, and pepper. Chill until ready to serve.

Serve the cauliflower bites hot with the dipping sauce on the side.
