Ingredients

 

For the Roasted Baby Potatoes

 

500 g baby potatoes

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt & black pepper

Fresh parsley (optional)

For the Creamy Garlic Chicken

 

4 chicken breasts (or thighs)

1 tbsp butter

1 tbsp olive oil

Salt & black pepper

1 tsp paprika

1 tsp Italian herbs (or oregano + thyme)

4–5 garlic cloves, minced

1 cup (240 ml) heavy cream

½ cup (120 ml) chicken broth

½ cup Parmesan, grated

1 tbsp chopped parsley

Juice of ½ lemon (optional, enhances flavor)

Instructions

 

1️⃣ Roast the Baby Potatoes

 

Preheat oven to 200°C (400°F).

Toss baby potatoes with:

→ olive oil, garlic powder, paprika, salt, pepper.

Spread on a baking tray and roast for 25–30 min, until golden and crispy.

2️⃣ Prepare the Chicken

 

Season chicken with:

→ salt, pepper, paprika, Italian herbs.

Heat a pan with 1 tbsp olive oil + 1 tbsp butter.

Sear chicken on medium-high heat:

→ 5–6 minutes per side, until golden and cooked through.

Remove chicken and set aside.

3️⃣ Make the Creamy Garlic Sauce

 

In the same pan, add minced garlic and sauté 30 seconds.

Add the chicken broth and scrape the flavors from the pan.

Pour in heavy cream and bring to a gentle simmer.

Add Parmesan and stir until creamy.

Add lemon juice (optional) + parsley.

Return chicken to the pan and coat in the sauce.

Simmer 3–4 minutes until thick and glossy.
