Ingredients:
2 cups (250g) all-purpose flour
1 ½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 ½ tsp ground cinnamon
½ tsp ground nutmeg (optional)
3 large eggs (room temperature)
1 cup (200g) granulated sugar
½ cup (100g) brown sugar
1 cup (240ml) vegetable oil (or melted butter)
2 tsp vanilla extract
2 cups (about 250g) grated carrots
½ cup (60g) chopped walnuts or pecans (optional)
½ cup (80g) raisins (optional)

🍰 Instructions:
1. Preheat oven: Set oven to 350°F (175°C). Grease and flour a bundt pan (or 9×13 pan, or two 8-inch round pans).
2. Mix dry ingredients: In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. Mix wet ingredients: In a large bowl, beat eggs, granulated sugar, and brown sugar until fluffy. Add oil and vanilla, mixing until smooth.
4. Combine: Gradually add the dry mixture into the wet mixture. Stir until just combined.
5. Fold in carrots and extras: Gently fold in grated carrots, nuts, and raisins.
6. Bake: Pour into prepared pan. Bake for 40–50 minutes (for bundt pan) or until a toothpick inserted in the center comes out clean.
7. Cool & serve: Allow cake to cool completely. Dust with powdered sugar, or glaze with cream cheese frosting if desired.
