Ingredients
For the Potato Dough:
4 medium potatoes, peeled and cooked
1 egg
½ cup breadcrumbs or wheat flour

1 cup cooked, shredded chicken

1 clove of garlic, minced
1 tablespoon olive oil

Preparation Method
1. Preparing the Potato Dough
Cooking the Potatoes : Cook the potatoes until they are very soft. Drain and mash them until they form a smooth puree.
Mix the Ingredients : Add the egg, breadcrumbs, salt and pepper to the mashed potatoes. Mix well until you get a smooth dough and set aside.
2. Preparing the Filling
Sauté the Aromatics : In a frying pan, heat the olive oil and sauté the onion and garlic until golden and soft.
Add the Vegetables : Add the carrots, peas and corn, stirring for a few minutes until soft.
Add the Chicken and Seasonings : Add the shredded chicken, paprika, cumin, salt and pepper. Cook for 2 more minutes, mixing well.
Finish the Filling : Remove from the heat, add the parsley and let cool a little before filling the potatoes.
3. Assembling the Stuffed Potatoes
Shape the Potatoes : Take a portion of the potato dough (approximately 2-3 tablespoons) and form into a disk.
Add the Filling : Place a tablespoon of the filling in the center and cover with more puree, shaping into a croquette or burger shape.
4. Breading and Frying
Coating : Dip each croquette in beaten egg and then in breadcrumbs, ensuring an even coating.
Fry : Heat oil over medium heat and fry potatoes until golden brown and crispy. Remove and place on paper towels to remove excess oil.

Healthier Version : Bake the stuffed potatoes in a preheated oven at 190°C for 20 minutes for a less fatty alternative.
