Ingredients (yields ~2 quarts):
6 cups fresh strawberries (hulled and halved)
4 cups freshly squeezed lemon juice (about 16–18 lemons)
6 cups sugar
6 cups water
Instructions:
1. In a blender, puree the strawberries until smooth.
2. In a large pot, combine strawberry puree, lemon juice, sugar, and water. Stir well and bring to a gentle simmer until sugar is fully dissolved (about 5–10 minutes).
3. Remove from heat.
4. Pour hot concentrate into sterilized quart jars, leaving ½ inch headspace.
5. Wipe rims, apply lids and rings.
6. Process in a boiling water bath for 15 minutes.
7. Allow jars to cool and seal. Store in a cool, dark place.
To serve: Mix 1 part concentrate with 2–3 parts cold water (or sparkling water).
